Almost Healthy Pancakes

 

So normally I never stray from a recipe.  I love cooking, but I play it pretty safe.  “Stick to the list”, is my motto.  But today, I had a wild hair or something, and decided to venture out a bit.  I found a general pancake recipe online, and then tweaked it to create my own little concoction.  And guess what, it was surprisingly good!  It wasn’t perfect, and I had to make some tweaks along the way, but I was happy with the result.

And it was just really cool to play around and create a dish.  I’m going to have to try this more often!

So if you’re interested, here’s the short recipe:

1 3/4 cups Whole Grain Oat Flour

1 Teaspoon Sea Salt

1 Tablespoon Coconut Sugar

3 1/2 Teaspoons Baking Powder

1 1/4 Cup Almond Milk

1 Egg

3 Tablespoons Melted Butter
